Chinese Favourites:
Chinese food is always cooked in a WOK, which is special pan for Chinese cooking and has a convex bottom.
1. Chinese Fried-Rice:
Ingredients:
3 cups long-grained (basmati) rice (soaked in water for 1/2 hour)
1 bunch of spring onions (finely chopped)
2 tbsp oil
1/4 cup carrots (finely chopped)
1/4 cup French beans (finely chopped)
1/4 cup boiled green peas
2 tsp Soya sauce
1 tsp Ajinomoto
Salt and pepper to taste.
Method:
Drain and cook the rice. Don't let it become too tender. Spread it on a plate when done. Sprinkle Soya sauce, Ajinomoto, salt and pepper and toss the rice till it is well coated. Let the rice cool outside then keep the plate in the refrigerator for 1 hour. Heat oil in a wok. Add carrots, green peas, French beans, spring onions and cover with a lid. Saute in between to avoid burning. When vegetables are tender add the rice and mix well. Cook for 5 more minutes and serve hot.
2. Hakka Noodles & Veg Manchurian Balls In Manchurian Sauce:
Ingredients:
For The Hakka Noodles:
200g boiled noodles
1/2 tbsp oil
50g carrot (cut into thin strips)
75g capsicums (cut into strips)
100g cabbage (roughly chopped)
40g spring onions (chopped)
1 tsp Soya sauce
1/2 tsp Ajinomoto
Salt to taste
1/2 tsp white pepper powder.
For The Vegetable Manchurian:
150g chopped cabbage
10g chopped green chillies
One small piece chopped ginger
15g coriander chopped leaves
1 tbsp chopped carrot
Salt to taste
1 tbsp Ajinomoto
2 tbsp refined Cornflour
Oil for frying
Manchurian Sauce:
75ml water (1cup)
10ml Soya sauce (1tsp)
Salt to taste
1 tsp Sjinomoto
3 tsp Sornflour
10g chopped ginger
10g chopped green chillies
3tbsp vinegar
Method:
To Prepare The Hakka Noodles:
Heat oil in a wok and saute the vegetables for a few minutes. Add the boiled noodles and toss. Mix the ingredients well. Add the salt
To Prepare The Vegetarian Manchurian Balls:
Sieve the salt, Ajinomoto and flour. Mix the chopped cabbage, green chillies, ginger, coriander leaves and carrot to form a mixture, which can be shaped into balls. Heat oil. Deep fry the balls and set aside.
To Prepare The Manchurian Sauce:
Mix the water, Soya sauce, salt, Ajinomoto, vinegar, chopped ginger, garlic and green chillies. Pour in a pan and bring to a boil. Mix the cornflour in a little water and let it dissolve completely. Pour it into the pan. Stir in well and simmer till the sauce to thicken. Add the fried Manchurian Balls to the sauce and bring to a boil once more. Remove from heat.
To Assemble:
Place hakka noodles in a serving plate. Top with the vegetable Manchurian balls in sauce. Serve hot.
