Pizzas

Broccoli and mushroom pizza
  • I deep dish pizza dough (not baked)
  • 3 cloves minced garlic
  • 1 cup basic tomato sauce
  • 2 t oregano
  • 2 t basil
  • 2 c sliced mushrooms
  • Salt and pepper
  • 1 onion chopped
  • 1/2 t crushed fennel seeds
  • 2 tbsp butter
  • 1 cup blanched, roughly chopped broccoli
  • 3 1/2 c grated mozzarella cheese
  • 1/2 c grated Parmesan cheese

Saute garlic in butter. Add onions, broccoli and mushrooms. Remove from heat. Add the herbs and fennel seed and mix well. Spread out dough in a pan. Spread sauce and arrange the broccoli mixture. Spread a layer of parmesan cheese. Then again a layer of sauce and broccoli mixture. Then spread mozzarella cheese. Bake in a pre heated oven till cheese melts.

Whole wheat spinach pizza
  • 1 Cup Tomato Sauce
  • 1 cup Spinach(blanched and chopped)
  • 1 Garlic Clove minced
  • 1 Tablespoon Olive Oil
  • 1/4 Cup bell peppers cut into strips
  • 1 Cup Mozzarella Cheese
  • Prepare the basic pizza base using half flour and half wheat. Otherwise the procedure and ingredients remain
  • same.

Heat oil. Sauté spinach with the garlic and a spoonful of water. Add pepper and tomato sauce. Spread over the crust and finish with the cheese. Bake for 25-30 minutes or until puffy and golden. You can add more toppings of your choice.

  • Pizza with roasted garlic puree
  • 8 cloves Garlic unpeeled
  • 1 tbsp Olive oil
  • 2 Pizza base
  • Chili flakes to taste
  • 3-1/2 cups Swedish fontina cheese, grated
  • 3 onions, sliced very thinly
  • 2 tomatoes sliced
  • 20 Cherry tomatoes
  • 1/2 cup mozzarella cubed
  • 2 tbsp Parmesan cheese grated
  • 2 tbsp Pine nuts
  • 2 tbsp chopped basil

Heat olive oil and saute garlic cloves, stirring continuously, until the garlic skin begins to caramelize. Remove from heat and roast it in an oven till golden brown. Cool. Peel the skin and make a fine paste. Sprinkle cornmeal in a baking dish and place the pizza dough in it. Spread the garlic paste over the dough. Sprinkle chili flakes and spread fontina cheese over the dough. Next place the tomatoes and onions. Arrange the cherry tomatoes over it and sprinkle mozzarella and Parmesan cheese over the top. Bake until it becomes golden brown. Garnish with chopped basil and serve.
