Noodles Bonanza

(noodles, ginger, onions, soya sauce)
1.Noodles With Ginger And Spring Onions:

Ingredients:
225g fresh noodles
3 tbsp oil
2inch piece ginger (finely shredded)
8 spring onions (shredded, green included)
1/2 tsp salt
2 tbsp thick Soya sauce (mixed together with 1 tbsp tomato sauce and 3 vegetable tbsp stock)
1 large cucumber(thinly sliced, peeled and de-seeded)

Method:
Boil noodles in lots of water with salt and little oil until soft. Wash in cold water, drain and keep aside. If using dried noodles, drain and keep warm. Heat oil in wok. Add ginger and stir-fry for 30 secs. Add the spring onions and salt, when they sizzle remove with a slotted spoon and set aside. Add noodles and cucumber to the wok and toss well. Stir in sauce mixture, and cook for 2-3 minutes. Add spring onions and ginger, toss well and serve immediately.

Cooks Tip:
You can add sliced mushrooms and shelled peas when adding the noodles. Rice noodle can be used instead of normal noodles.

(noodles, fried, gravy, soya sauce)
2.Vegetable Noodles With Gravy:

Ingredients:
Fried Noodles:
100g noodles (boiled)
2 tbsp oil
3 dry whole red chillies (broken into bits)
1/2 tsp chilli powder
2 tsp Soya sauce
Salt to taste

Vegetables:
1 capsicum shredded
1 carrot shredded
1/2 cup shredded cabbage
3-4 flakes garlic (crushed and chopped)
2-3 spring onions (chopped)
2 tbsp shredded bamboo shoots
3-4 tbsp bean sprouts
2-3 mushrooms (cut into 4 pieces)
Salt and pepper to taste
1/2 tsp sugar
1/2 tsp Ajinomoto
1 tbsp Soya sauce
2 tsp vinegar
1 cup water
1 1/2 tbsp cornflour dissolved in 1/2 cup water.

Method:
Heat 2 tbsp oil in a pan on low flame. Add broken red chillies, chilli powder, boiled noodles, salt and Soya sauce. Fry for 1 minute till evenly brown. Keep the fried noodles aside. To prepare the vegetables- Heat 3 tbsp oil and add garlic. Stir in vegetables in sequence of their tenderness. Starting with onions, mushrooms, sprouts, bamboo shoots, capsicum, carrot and cabbage. Finally add ajinomoto, salt, pepper, soya sauce and vinegar. Cook for a minute and then add water. Boil and add cornflour mixture, stirring continuously. Cook till thick. Spread the fried noodles on a platter. Pour the prepared hot vegetables over the noodles. Serve.
