4.Saucy Cauliflower
Ingredients:
1 medium cauliflower broken into floweret's
1 chopped onion
1 small piece grated ginger
2 cloves crushed garlic
1/2cup tomato puree
1 tbsp butter
1/2 tsp sugar
1 tsp brown vinegar
Salt to taste, soya sauce and chilli sauce(optional).
Method:
Cook the cauliflower with salt in just enough water. Arrange in a shallow serving dish. Fry onion, garlic and ginger in butter till soft. Add tomato puree, vinegar, sugar, salt and simmer for 5 minutes. Pour the sauce around the cauliflower and serve.

5.Carrot Rolls/Paranthas
Ingredients:
1 cup grated carrot
3/4 cup wheat flour/atta
1/4 cup gram flour/besan
1/4 tsp cumin seeds powder/jeera powder
Pinch of carraway seeds/ajwain
Salt and chilli powder to taste
Oil/ghee for cooking.
Method:
Oil your fingers and knead all the ingredients into a soft dough, adding water only if necessary. Roll out,as for chapatis.Cook on a non-stick pan/tava with very little oil.

6.Stuffed Capsicums
Ingredients:
4 capsicums
1/2 cup rice
1/2 cup shelled green peas
1 cup tomato juice
1 tbsp chopped coriander leaves
Salt to taste.
Method:
Halve the capsicums and remove the seeds.Wash rice and cook with peas, tomato juice and salt. Mix the coriander leaves. Stuff this mixture into halved capsicums. Steam for 5-7 mins or till capsicums are soft.
