Baked Dishes

1.Broccoli and Carrot Bake:

Ingredients:
1 small broccoli(broken into small florets)
1 carrot cut into small cubes
2 tbsp flour(maida)
2 tbsp butter
2 1/2 cups milk
25g cheese(grated)
Salt to taste
1/2 - 1/4 tsp pepper

Method:
Chop the broccoli stalks round slices. Keep the florets pieces small. Melt butter in a heavy bottomed pan and add flour. Stir for 1 minute on low flame. Remove from heat and add milk stirring continuously. Boil and add broccoli and the carrots. Cook stirring continuously till the vegetables turn soft and sauce turns thick. Add cheese,salt and freshly ground pepper to taste. Pour to a greased serving dish. Bake for 20minutes at 230 degree C till golden.

2.Saffron And Spinach Casserole:

Ingredients:
1 cup macaroni
1 tbsp oil
1 big onion
15 cloves garlic
8-10 French beans
1 medium Zucchini
1/2 medium broccoli
1/2 bunch spinach
2 medium carrots
3 tbsp butter
1 tbsp refined flour(maida)
1 1/2 milk
a pinch nutmeg(grated)
1 cup grated cheese
salt to taste
1/4 tsp pepper powder
1/4 tsp freshly crushed peppercorns
a generous pinch saffron.

Method:

  1. Boil water, add 1 tbsp of oil and the pasta. Don't over cook the pasta. Peel and chop onions and garlic.
  2. Cut beans, zucchini and carrots in diamond shape. Blanch french beans,zucchini,broccoli,spinach and carrots one by one. Puree the blanched spinach and break broccoli into small florets. In a pan heat 1 tbsp of butter and saute flour. Remove from heat. Gradually add 1 cup milk, stirring continuously so that no lumps remain. Add nutmeg,some cheese,salt and pepper powder. This sauce is the mornay sauce.
  3. Heat 1 tbsp butter and saute chopped garlic and onion till golden brown. Add beans,broccoli,zucchini and salt and saute well. Pour half of the mornay sauce, 1/2 cup of milk and mix well.
  4. Add spinach puree and half of the freshly crushed pepper. Dissolve saffron 1/2 cup of milk. Take another pan and heat the remaining butter. Saute carrots and add boiled pasta, remaining mornay sauce, saffron milk, salt and mix well. Cook for sometime and add the remaining crushed pepper.
  5. Pour the green vegetable mixture in a greased dish. Spread half of the grated cheese on the green vegetable mixture. Then pour the carrot-pasta mixture over it and spread a layer of remaining grated cheese. Bake for 5-10minutes in a preheated oven at 250 degree F till the cheese melts and turns golden.
