Beat the butter and sugar until light and feathery. Blend in the
eggs and vanilla; mix it well. Mix together the flour, salt and
baking soda; and then put it into the sugar mixture until well
blended. Cool it for 2 hours. Preheat the oven to 350 degrees.
Divide the dough into quarters. Now, roll out one quarter on a
lightly floured surface to 1/8-inch thickness. Cut them into
heart shapes with a 2-inch cutter and place them on an ungreased
cookie sheet. Bake it for 5 to 8 minutes or until the cookies
become brown at the edges. Cool on a wire rack.
For the Icing :
Mix together the confectioners' sugar and milk until smooth.
Spread on the cookies.
Easy Eggs Benedict
Ingredients :
* 4 English muffins, split
* Butter, softened
* 8 sl Canadian bacon, cooked
* 8 Poached eggs
* Orange Hollandaise Sauce
* 2 c Fresh orange juice
* 1 c Unsalted butter
* 1/2 ts Salt
Directions :
Spread cut sides of muffins with butter. Broil until lightly
browned. Place a slice of Canadian bacon on each muffin half;
top with poached egg, and cover with Hollandaise Sauce. Serves
4. Orange Hollandaise: Place the orange juice in a saucepan and
bring it to a boil. Reduce the heat and simmer until it is thick
and syrupy, 10-12 minutes. You should have 1/4 cup syrup. Set it
aside. In another saucepan, melt the butter in a thin stream.
Process a few more seconds, until thick. Serve immediately.
Makes 2 cups; serves 4.
Mother's Day Apple Almond Pancakes
Ingredients :
* 1/2 c Whole-wheat flour
* 1/2 c Unbleached flour
* 1 tb Brown sugar
* 1 1/2 ts Baking powder
* 1/4 ts Salt
* 2 Eggs, separated
* 4 tb Oil
* 1/2 c Buttermilk
* 1/2 c Apple Juice
* 1/4 c Chopped almonds
Directions :
Combine flours, sugar, baking powder, and salt in a mixing bowl.
Beat egg yolks with oil, buttermilk, and apple juice. Stir into
flour mixture with nuts until all ingredients are moistened (do
not over stir). Beat egg whites until stiff and fold into
batter. Spoon onto a hot,greased griddle and turn once when
bubbles appear. Makes 8 to 10 pancakes.
French Toast with Brandied Lemon Butter
Ingredients :
* 4 Eggs
* 2 tb + 1 ts sugar
* 1/2 ts Salt
* 1 c Whole milk
* 1/4 ts Vanilla extract
* 12 Thick slices of bread
* 1/2 c Butter
* 1 c Sugar
* Juice of 2 lemons
* 4 ts Grated lemon rind
* 3 oz Brandy
Directions :
In a shallow dish, beat eggs, sugar, salt, milk and vanilla.
Soak bread in the above mixture. Heat butter over medium high
heat and cook each slice of bread until slightly brown on each
side. Serve with brandied lemon butter and lemon slices.
Sprinkle with powdered sugar, if desired. For Brandied Lemon
Butter: Melt butter over low heat. Spoon off any foam that
forms. Pour into a dish, leaving behind any sediment in the pan.
Wash pan, pour butter back in the pan and add the sugar. Stir
constantly until sugar dissolves. Add lemon juice, rind, and
brandy; stir until smooth. Pour over hot french toast.
Easy Mother's Day Breakfast Pizza
Ingredients :
* 6 Eggs
* 8 oz Mozzarella Cheese, grated
* 1 1/2 c Milk
* 1 Onion*
* Salt and Pepper, to taste
* 1 md Green pepper, ringed
* Mushrooms
* 1 Pizza crust
* Olive oil
Directions :
chop up 1/4 of the onion and make onion rings out of the remaing
3/4. Prepare your favorite pizza crust and get ready to bake, as
a regular pizza. Make sure that you have a fairly high ridge, as
the there is a lot of mixture, and it is fairly watery. Beat
eggs lightly. Add mozzarella cheese, milk, onion, salt and
pepper. Mix gently. Lightly brush olive oil over the pizza base.
Pour mixture over the crust. Place green pepper, onion rings,
and mushrooms over the top of the pizza. Bake at 450 degrees F.
for about 15 to 20 minutes, or until crust is brown and egg
mixture is set.

* 1 c Milk
* 1/4 c Margarine, melted
* 1 Egg
* 2 tb Wheat germ
Directions :
Heat oven to 400 degrees F. Spray muffin tray with cooking spray.
Combine the flour, wheat germ, sugar, baking powder, and salt; mix well.
Combined the milk, margarine, and egg; mix. Add to the dry ingredients
and mix just until blended; don't overmix. Fill the muffin cups 2/3
full. Sprinkle with wheat germ. Bake for 20 to 22 minutes or until a
wooden pick inserted in the center comes out clean. Serve warm with
butter. Nutritional Information: per muffin: 150 calories, 4g fat, 0mg
chol, 1g fiber, 140mg sodium.
Variations :
Apple Cinnamon Muffins : Add 3/4 cup finely-chopped apple and 1 tsp
cinnamon to the dry ingredients.
Jam-filled Muffins : Fill the muffin cups 1/2 full with batter. Spoon 1
tsp jam (any flavor) into the center of each muffin; top with the
remaining batter.
Dried Fruit Muffins : Add 1/2 cup of any one of the following dried
fruits to the dry ingredients: raisins, cherries, blueberries,
cranberries, chopped dates or diced dried mixed fruits.
Berry Good Muffins : Add 3/4 cup fresh or frozen berries (do not thaw)
and 3/4 tsp grated lemon peel to the dry ingredients.
Peanut Butter Cookie (Low Fat)
Ingredients :
* 1 can (14 oz.) low fat sweetened condensed milk
* 3/4 cup reduced fat peanut butter
* 1/4 cup fat free egg substitute
* 1 teaspoon vanilla extract
* 2 1/4 cup reduced fat biscuit mix
* 1/4 cup sugar
Directions :
Mix the milk, peanut butter, egg substitute and vanilla with a mixer on
a low setting until it becomes smooth. Add the biscuit mix and blend
them well. Cover and chill for at least 3 hours. Preheat your oven to
350. Drop the dough by teaspoonful 2 inches apart on a cookie sheet
coated with nonstick spray. Spray with sugar and bake the cookies until
they become light brown, for about 6-8 minutes.
Preheat oven to 350 degrees F. Line up 13x9" baking pan with foil. Coat
it with vegetable cooking spray. Mingle all the ingredients- flour,
cinnamon, baking powder, baking soda, salt, nutmeg, and cloves in a
bowl. Beat sugar, pineapple, oil and vanilla in mixer bowl until light
and smooth. Beat in dry ingredients until fully mixed. Stir in carrots.
Now beat egg whites in small mixer bowl to form stiff peaks; fold into
carrot mixture in 2 batches with rubber spatula. Pour batter into pan.
Bake for 40 minutes or until toothpick inserted in center comes out
clean; cool in pan or on wire rack. Invert cake onto wax paper; remove
pan and foil. Your Mother's Day carrot cake is ready to be served.
Shrimp Pizza
Ingredients :
* 1 lg -Pizza shell; pre-baked
* 1/3 c - Pizza sauce shrimp
* 1/3 c - Mozzarella cheese; grated
* 12 lg- Shrimp; cooked
* 1 md -Red Bell Pepper
* Pieced artichoke hearts, sliced ( Frozen and thawed)
* 1 x - Olive oil
* 1 x - Minced Basil
Directions :
Trim the pizza shell(s) or foccacia bread into heart shape and place
them on pizza pan or baking sheet. Spread pizza sauce on shell to near
edge and then sprinkle cheese over sauce (not quite to edge of sauce).
Place shrimp, in pairs, on top of cheese with tails touching, to make
hearts. Do the same with some slices of red bell pepper, using the top,
where it curves, for the top of the heart. Put a few slices of artichoke
heart here and there. Sprinkle a little olive oil over top. Sprinkle
with crushed basil. Bake at 375 degrees until cheese melts and pizza is
piping hot. Serve Hot.
Preheat the oven to 200°C (gas mk 6, 400°F). Dice the onion and carrot.
Heat the oil in a large saucepan and add the onion and carrot. Fry for
5-8 minutes stirring occasionally until the onion is lighlty browned.
Meanwhile, skin quarter and boil the potatoes in water until softened.
Add the minced lamb to the onion and carrot and fry for a further 10
minutes, stirring and breaking up the mince with a wooden spoon. Stir in
the flour. Add the beef stock, rosemary, thyme and tomato puree. Season
with black pepper. Simmer for 15 minutes until most of the liquid has
evaporated. Mash the potatoes with the butter and milk until smooth.
Grate the cheddar and mix into the potato with a pinch of salt. Check
the lamb for seasoning, adding salt if necessary (be careful with the
salt as your beef stock will already contain salt). Spoon the lamb into
a baking dish, and cover with the mashed potato. Use a fork to draw
ridges across the top if desired. Bake the shepherds pie for 35 - 40
minutes until the potato is lightly browned. You can use minced beef in
this recipe instead of lamb to make cottage pie. If you want the top of
the shepherds pie to be browned more, put a little butter on top of the
potato.
Roast Leg of Lamb
Ingredients :
* 6 lb - Leg of lamb, well trimmed
* 5 ea- Cloves garlic (Peeled and thinly sliced)
* 20 ea- Small sprigs fresh rosemary
* 20 ea- Small sprigs fresh sage
* 1/4 c -Olive oil
* 1 x -Salt and pepper
Directions :
Take a sharp pointed and make thin, deep slits all over the leg of lamb;
insert the garlic slivers and herb sprigs into those slits. Sprinkle the
leg of lamb with olive oil, salt and pepper. Let it soak at room
temperature for about 20 minutes. Preheat oven to 425 degrees F. Place
the leg of lamb on a rack set in a roasting pan, and cook for one hour.
Remove from oven and let stand for ten minutes before carving.
Easy Lemon Chicken
Ingredients :
* 2 cloves garlic
* 2 tablespoons fresh rosemary (1 tablespoon dried)
* 2 tablespoons margarine
* 1 tablespoon olive oil
* 2/3 cup lemon juice
* 4 boneless skinless chicken thighs or breast (thawed)
* Salt and pepper to taste
Directions :
Take a heavy frying pan and mix margarine and oil together; heat over
medium-high heat until margarine melts. Stir fry garlic and rosemary in
the oil/butter mixture for 2 minutes and then add lemon juice and bring
the mixture to a boil. Add chicken and fry until it becomes brown on all
sides. Add salt and pepper to taste. Decrease heat to low, cover, and
cook for 20 - 30 minutes or until chicken is fully cooked.
Remove head and tail from salmon and fillet. Place one-half skin side
down on a large sheet of foil in a baking pan. Add spices and layer with
lemon, onion, and bacon. Mix corn syrup and ketchup and pour 1/2 over
the fillet. Place second fillet flesh side down over the first; pour
rest of sauce over all. Seal with the foil and bake 30- 40 minutes at
400. Salmon will flake easily with a fork in the thickest part when it
is done. Do not overbake. Serve hot; oven baked potatoes or corn would
make a good accompaniment with a green salad.
Easy Pork Spaghetti
Ingredients :
* 1 lb Ground pork
* 1 ea Minced garlic
* 1 tb Whole basil
* 1 lb Can of tomatoes
* 2 ea 6oz. cans tomato paste
* 1 ea Small mushrooms
* 12 oz Noodle
* 1 ts Salt
* 1 c Water
* Basil, oregano, etc. to taste
Directions :
Brown ground beef and drain. Add garlic, basil, tomatoes, tomato paste,
and mushrooms. Simmer, covered 14-20 minutes; stir often. Cook noodles
in salted water.
Chicken Parmigiana
Ingredients :
* 1/3 c dry bread crumbs
* 2 ts parmesan cheese -- grated
* 3/4 ts Italian seasoning
* 1/2 ts garlic powder
* 1 lb chicken breasts without skin
* 1 egg -- beaten
* 8 oz tomato sauce
* 3/4 c mozzarella cheese -- shredded
Directions :
Combine bread crumbs, cheese, italian seasoning, and garlic powder in a
shallow bowl. Dip each chicken breast in beaten egg, then roll in bread
crumb mixture to evenly coat. Place chicken on a cookie sheet or
jelly-roll pan. Bake in preheated 375F oven for 10 minutes. Turn chicken
over; bake 10-12 minutes or until chicken is thoroughly cooked. Spoon
tomato sauce over chicken. Sprinkle cheese over top. Bake 3 minutes or
until chicken is melted.
